Quinoa Salad

1. Quinoa 1 Cup
2. Onion (Chopped) 1 Cup
3. Apple (Sliced) 1/2 Cup
4. Sprouts 1/2 Cup
5. Blanched Broccoli Florets 1/2 Cup
6. Sunflower Seeds 1 tbsp
7. Lemon Juice 4 tbsp
8. Olive Oil 2 tbsp
9. Crumbled Feta Cheese 1/2 Cup
Salt and pepper to taste



In a pot, cook quinoa with cups of water, until all the liquid is absorbed .Transfer the quinoa to a bowl . Add chopped onion, blanched broccoli ,sliced apple and sprouts ; toss to combine .In separate bowl ,whisk together lemon juice ,oil ,salt and pepper until combined .Add the dressing to the quinoa mixture; toss to combine .Sprinkle with crumbled feta cheese ; serve .
